Portuguese Blender Cake (Gluten Free)

A delicious quick and easy gluten-free dough made in a mixer, with a filling inspired by Portuguese pizza

Ingredients for the blender pie dough (gluten-free):

– 3 units of egg

– 2 cups of whole milk

– 1 cup(s) of oil + a little to grease the pan. (or olive oil)

– 3 tablespoons of parmesan cheese (optional)

– 2 cup(s) (tea) of rice flour + a little to sprinkle the pan. (or gluten-free flour blend)

– Salt to taste

– 3 teaspoons of chemical baking powder TO

Portuguese style filling ingredients

– 150 grams of grated mozzarella cheese.

– 3 units of tomato, without seeds, cut into strips.

– 3/4 unit(s) of onion, finely cut into half moons.

– 195 g of cooked ham, in strips.

– Eggs to taste, boiled.

– Salt to taste

– Olive oil to taste

– Dried oregano to taste TO

Materials necessary for its realization:

– 1 1/2 teaspoons grated Parmesan cheese, or as much as you like.

Previous preparation:
  1. For a cake like the one in the photo, use a 25 cm mold – 6 sections.
  2. Separate utensils and recipes.
  3. The substitution ratio of gluten-free flour in this recipe was 1:1 to wheat. If you are using a product (gluten-free flour blend), check the packaging to see if the usage is 1:1; if not, adjust it.
  4. Place the eggs in cold water and place over high heat. Once it boils, reduce the heat and cook for 8 to 10 minutes. Drain, cover with cold water and let cool.
  5. Preheat the oven to 180°C.
  6. Wash the tomatoes, remove the seeds and cut them into strips.
  7. Wash and peel the onion(s) and cut it into thin half-moons.
  8. Cut the ham into slices and then into slices.
  9. Remove the pits from the olives and cut them into slices.
  10. Grate the cheese, the mozzarella on the coarse side and the parmesan on the fine side.
Product:

Cake Base Flour in Blender (Gluten Free):

  1. In a blender, place the egg(s), milk, oil, salt, Parmesan cheese (optional), and gluten-free flour.
  2. Beat until a homogeneous mass is formed.
  3. Turn off the blender and add the yeast.
  4. Balance.

Portuguese Blender Cake (Gluten Free):

  1. Peel and chop and/or slice the egg (reserving a few pieces for garnish, if desired).
  2. Brush the pan with olive oil and sprinkle with gluten-free flour.
  3. Pour half of the batter into the pan, filling the entire bottom.
  4. Add half of the filling ingredients: ham strips, chopped olives, tomato strips, onion half-moons, grated mozzarella and a chopped or sliced ​​hard-boiled egg. Sprinkle with dried oregano.
  5. If you want your filling to be more visible on top, place all the mozzarella “inside” the bag.
  6. Cover the rest of the dough and lightly tap the molds on the counter.
  7. Place the remaining filling on top.
  8. Garnish with sliced ​​eggs (canned – this garnish is optional)
  9. Sprinkle with oregano and finally sprinkle with parmesan cheese (optional); If you sprinkle parmesan, the filling will be “covered.”
  10. Bake in a preheated oven at 180°C for 45 to 50 minutes or until cooked through.
  11. To make sure the cake is cooked, test with a toothpick by inserting it into the center of the cake, if it comes out clean it is ready.
Finishing and Assembly:
  1. Unmolded the Portuguese Blender Cake (Gluten Free)) on a serving plate.
  2. Serve hot or at room temperature.
